I found this recipe and it reminded me of a cake that I'd eaten as a child. Isn't it funny how food can bring back memories? Anyway, I baked it and was so pleased that it tasted just as I remembered. Enjoy!
Rhubarb Cake

1/2 c. butter (or shortening)
1 1/2 c. sugar
1 beaten egg
1 c. sour cream
1 tsp. vanilla

1 tsp. baking soda
2 c. flour
1 1/2 to 2 c. rhubarb, chopped

Topping: 1/3 c. sugar mixed with 1 tsp. cinnamon
Cream butter and sugar. Then add egg, sour cream and vanilla, one at a time. Mix flour and baking soda and add to creamed mixture. Add rhubarb. Top with cinnamon-sugar mixture and bake in greased 9x13 inch pan at 350 for 45 minutes.
